Lardo - Truffle Oil Infused 80g
Free-range pork back fat is highly flavoured, cured, fermented and infused in English truffle oil to produce this award-winning and flavoursome Lardo.
The thickest back fat from free-range West Country pigs is cured for three months with rosemary, garlic, sage, juniper berries and black pepper.
It is then fermented, a process that alters the structure of the fat and makes it render at a much lower temperature giving the fat an incredibly silky mouth-feel, and finally brushed with and infused in English truffle oil for another month.
Delicious on hot sourdough bread or as shavings with risotto.
