I learned to bake from my grandmother and mother. For as long as I can remember, I would watch them in the kitchen – I was always the one “getting in their light”, trying to see how they mixed a batter or iced a cake. To supplement my home-grown knowledge, I took a course in patisserie at Le Cordon Bleu in London which, aside from showing me exactly just how much butter the French use in their pastries(!), taught me valuable techniques and gave me experience of a professional kitchen.
After becoming increasingly aware of what we’re all putting into our bodies, I’ve more recently set out to adapt the traditional recipes that I know and love…substituting butter and refined sugar and flour – amongst other things – with natural nutritious alternatives. I really believe that to eat better is to live better and although it’s fun to have an indulgent treat here and there, it’s not difficult to eat well without feeling that you’re missing out.

All flour is stoneground and organic from Dove’s Farm, Sharpham Park or Bacheldre Mill.
All eggs are Class A, free range.
All maple syrup is 100% pure from Buckwud Canada.
All sugar is unrefined and Fairtrade.
All chocolate is Fairtrade.
All coconut oil is raw and organic.
