If you like Italian Bresaola then you are likely to enjoy our Dorset Air-Dried Beef. We make it using the silverside of grass-fed Aberdeen Angus cattle raised on Fossil Farm, Winfrith Newburgh, Dorset by the Sealey family, or other local farms with high welfare standards. The beef is cured with black pepper, rosemary, thyme, and juniper berries before being slowly air-dried in our maturing room for several weeks.
The texture is firm but supple and the colour is a deep rich red with a flavour to match. Try serving this with a drizzle of a drizzle of extra virgin olive oil, squeeze of fresh lemon and a little freshly ground black pepper.
